The team behind The Pink Elephant Café have spent the last two decades working at some of Manhattan’s top restaurants. Erin, originally from Ireland studied hotel management. Moved to NYC, worked in Irish bars in Times Square, Le Parker Meridien and at 3 Michelin Star restaurant Le Bernardin. Juan, all the way from Ecuador has spent over 15 years working at Soho’s institute Balthazar, along with other hot spots such as Artisanal and Cafe Grey.
Now, settling in Kingston to raise a family, they start another journey. The Pink Elephant Café. Open Monday – Friday for breakfast and lunch, Saturday and Sunday, brunch. They have teamed up with local coffee roaster ‘North River Roasters’ who source their beans from volcanic coffee farms & air roast in Poughkeepsie. SerendipiTea Tea Bags, certified organic and kosher. They source all their meat and fresh produce through Hudson Harvest who were created to source fresh, in season products from local farms and businesses. Also offering a wide selection of Jane’s Ice cream, made right here in Kingston using the finest natural and local ingredients.
